Chicken & Moros Wrap

Wrap up a healthy lunch with chicken, fiber-rich black beans and chopped vegetables. Pair with one of our Nueva Cocina Soups for a full, satisfying meal.



Ingredients

1 pacakge of Nueva Cocina Black Bean & Rice Mix (Moros y Cristianos)
1 lb cooked chicken (breast or thighs)
1/2 iceberg lettuce shredded into strips
3 tomatoes diced
Shredded Monterrey Jack/Cheddar Cheese (optional)
1 package 12" whole wheat or spinach wraps

Directions:

Pepare rice according to the preparation directions on the Nueva Cocin®a Black Bean & Rice Mix package.  Chop the chicken into 1" cubes. In a large bowl combine the chicken, rice and cheese. Spoon approximately 6 ounces of the mixture onto a wrap and add lettuce, tomatoes, and your choice of sauce. Wrap and cut the wrap across on the bias. Enjoy!
 
Makes 4-5 servings.
