Chicken Enchiladas

Treat yourself to an authentic Mexican experience with this easy and very tasty Chicken Enchilada recipe. Easy to assemble, deliciously creamy and a great choice for any occasion. Try them as a main dish or include them buffet style and wow your guests at your next dinner party.



Ingredients

1 lb. chicken breast - sliced into wide strips
1 12 oz. package of shredded cheddar or Mexican cheese
1 package of Nueva Cocina® Tortilla Soup
4 cups of water

Directions

In a medium saucepan combine the Nueva Cocina® Torilla Soup packet and water. Bring to a boil for 1 to 3 minutes. Reduce heat to low and continue to cook for 5 minutes. Add the chicken breast and continue to cook for about 15 minutes or until the chicken is cooked. Separate the chicken from the soup and shred it with two forks. Wrap corn tortillas in damp paper towels and mircrowave for 30 seconds. Lay one tortilla flat and add 2 1/2 oz. of cooked chicken, 1 oz. cheese and 1 teaspoon of tortilla soup.  Roll tortilla and place in a 2" deep rectangular baking dish, seam down.  Repeat the process for all of the tortillas.  When completed, sprinkle with remaining cheese and 4 tablespoons of Tortilla Soup. Bake in a 425° oven for 8 to 10 minutes until cheese melts and edges of enchiladas are golden brown. Garnish with sliced green onion and diced tomato (optional). Serve immediately.
