Stuffed Bell Peppers/Aji Relleno

Try this great tasting Spanish Style Stuffed Bell Peppers as an appetizer or main dish. They are easy to prepare and very nutritious. This dish also makes for a fantastic vegetarian meal, just skip the addition of meat. Muy delicioso!



Ingredients

1 1.25oz. packet of Nueva Cocina® Picadillo Seasoning
1 lb of ground beef, turkey or chicken
1 package Nueva Cocina Mexican Rice Mix
1 8 oz. can of tomato suace
1/4 cup water
1 cup shredded jack & cheddar cheese (optional)

Directions

Cut off tops of peppers and remove membrane. Cook meat according to the Nueva Cocina Picadillo Seasoning Mix packet and set aside. Prepare Nueva Cocina Mexican Rice Mix according to package directions and set aside.  In a large mixing bowl combine the cooked ground beef, cooked rice, water and 3/4 cup of shredded cheese (optional). Mix well. Stuff peppers with meat mixture and place in a 3-quart baking dish. Sprinkle remaining cheese over the stuffed peppers. Bake at 350° degrees for 45-50 minutes until peppers are tender and cheese is melted.
*Can also be prepared using Nueva Cocina® Taco Fresco Seasoning
